I have recently discovered the Paleolithic diet. I must say that after reading many articles on the net, or magazines, on diets with no carbohydrates and how complex sugars can cause problems to our health.I found in the Paleolithic diet a good guideline for the proper nutrition.
Working in catering and cooking large amounts of food to many people for over 15 years, I am increasingly aware of how many allergies are mainly related to foods which are not present in the paleo diet; celiac disease, favism and allergy to dairy products are very common among my customers. I found very interesting the results of various studies which demostrate how human genome is almost the same ( with a difference of only 0.02 %) compared to that of our Paleolithic ancestors, but our alimentation ( mostly for the variety ) has changed a lot.
